Ingredients

Rainbow Quinoa Salad

  • 2 cups cooked quinoa
  • 1 bunch of cilantro, chopped
  • 1 yellow pepper
  • 1 small red onion, chopped
  • 1 cucumber, diced
  • 1 cup of chickpeas
  • 2 carrots, shredded into ribbons
  • Herbamare® Original to taste

Dressing

  • ⅓ cup olive oil
  • 2 tbs white balsamic vinegar
  • 2 tbs apple cider vinegar
  • 1 tsp dijon mustard
  • 1 ½ tsp maple syrup
  • Herbamare® Original to taste

  • Good source of the B vitamins

Quinoa is higher in protein than other grains and cereals. Protein is necessary for tissue growth and repair. Quinoa is also a good source of magnesium, a mineral important for nerve and muscle function.

How to make Rainbow Quinoa Salad

1. Add all the ingredients to a bowl.

2. Dressing: Mix well and serve over salad. Toss salad and enjoy! Keeps well in the fridge for 3-4 days
