Pennes aux crevettes, tomates et épinards

This recipe for penne with shrimp, tomato and spinach is nutritious and perfectly seasoned with Herbamare salt!

Ingredients

Penne with shrimp, tomato and spinach

  • 5 ml (1 tsp.) Herbamare Original organic herbal sea salt 
  • 750 ml (3 cups) penne 
  • 24 medium shrimp (size 31/40), raw and peeled
  • 30 ml (2 tablespoons) olive oil 
  • 125 ml (1/2 cup) dry shallots (French), minced 
  • 2 garlic cloves, minced 
  • 4 Italian tomatoes, seeded and diced 
  • 60 ml (1/4 cup) chopped fresh parsley 
  • 80 ml (1/3 cup) minced fresh basil 
  • 125 ml (1/2 cup) white wine
  • 500 ml (2 cups)  baby spinach
  • Pepper to taste 
  • 250 ml (1 cup)  grated Parmesan cheese

How to make Penne with shrimp, tomato and spinach

1. In a pot of boiling salted water, cook pasta al dente. Drain.

2. Season shrimps with half the salt.

3. In the same pan, heat oil over medium heat. Cook shrimp for 1 to 2 minutes on each side. Set aside on a plate.

4. In the same pan, cook shallots and garlic for 1 to 2 minutes.

5. Return shrimp to pan. Add tomatoes, herbs and white wine. Continue cooking for 2 to 3 minutes, until almost all the liquid has evaporated.

6. Add pasta and spinach. Stir to combine. Heat for 1 to 2 minutes. Season with remaining salt and pepper.

7. Garnish with Parmesan just before serving.
