Chili salmon steaks, mango and avocado salsa

With spicy Herbamare salt, this recipe for salmon steaks with chili, mango salsa and avocado is bound to be tasty.

Ingredients

Chili salmon steaks, mango and avocado salsa

  • 4 salmon fillets, skin removed
  • 5 ml (1 tsp.) Herbamare Organic Herb Spiced Sea Salt
  • 30 ml (2 tablespoons) olive oil
  • 80 ml (1/3 cup) dried shallots (French), chopped
  • 15 ml (1 tablespoon) grated ginger 
  • 10 ml (2 teaspoons) chopped garlic
  • 160 ml (2/3 cup) sweet chili sauce
  • 30 ml (2 tablespoons) soy sauce
  • 1 lime (zest and juice)

For the salsa

  • 250 ml (1 cup) mango peeled and diced
  • 30 ml (2 tbsp.) fresh lime juice fresh lime juice
  • 30 ml (2 tablespoons) olive oil
  • 15 ml (1 tablespoon) chopped fresh coriander
  • 5 ml (1 tsp.) Herbamare organic herbal spiced sea salt
  • 1/2 avocado, diced
  • 1/2 small red onion diced

How to make Chili salmon steaks, mango and avocado salsa

1. In a bowl, combine salsa ingredients. Set aside.

2. Season salmon fillets with three-quarters of the spicy salt.

3. Heat oil in a skillet over medium heat. Cook salmon fillets for 2 to 3 minutes on each side. Set aside on a plate.

4. In the same skillet, cook shallots, ginger and garlic for 1 to 2 minutes.

5. Add chili sauce, soy sauce, remaining salt and lime zest and juice. Bring to the boil.

6. Return salmon fillets to skillet. Continue cooking for 1 to 2 minutes, turning the fillets halfway through.

7. Just before serving, garnish salmon fillets with salsa.
